So, why farm fresh eggs??
Many would argue that farm eggs are "prettier" than your normal store bought egg. But did you know that most of the eggs that you buy at the store have been kept just above freezing to give them longer shelf life? By the time you buy them, they can be up to several weeks old! Thus, the reason why the yoke looks pale and washed out.
If you have ever eaten a fresh egg, you will undoubtedly notice a difference in the color and the texture. But aside from aesthetics farm fresh eggs are SO much better for you! For example;
~1/3 less cholesterol
~1/4 less saturated fat
~2/3 more vitamin A
~2x more omega-3 fatty acids
~3x more vitamin E
~7x more beta carotene

On a side note, have you ever watched the Cooking Chanel? Or the Food Network? Ryan and I love to watch those stations when we are home from work and "chilling" on the couch. Have you ever noticed during those shows, when they go to pull eggs from the refrigerator, 9x out of 10, they reach for brown eggs? I think that it is safe to say, farm fresh eggs are the cooks preferred choice, when it comes to cooking. Just saying! :)
